Why Ashford Castle is the Heart of Irish Luxury

We recently returned from a family trip to Ireland. I knew I had to sit down and write this Ashford Castle review. There is a specific moment when you realize you are being looked after by family. For us, that happened in the George V Dining Room.

Eleanor greeted us warmly amidst the Waterford Crystal chandeliers. Within minutes, it felt like a family reunion. She even gave me a hug. I felt like we had known each other forever. That is the essence of this castle. It is grand, but never cold.

The Arrival & The Rooms

From the second we hit the first gate in Cong, the service was seamless. We checked into two rooms that managed to be both regal and incredibly tech-forward. We’re talking automatic blinds that reveal the stunning grounds at the touch of a button, and the kind of heated bathroom floors and towel racks that make it very hard to leave your suite in the morning.

The details are what stick with you: a chocolate Irish Wolfhound waiting for us, a personal bottle of sherry for a nightcap, and the genuine thoughtfulness of the staff. When we finally checked out, they didn’t just say goodbye; they handed us bottles of water for our journey ahead, anticipating we’d need them before we even realized it ourselves.

The Dungeon & The Dining

We spent our evenings in The Dungeon restaurant (Ashford Castle’s most relaxed dining experience.). Don’t let the name fool you—it’s warm, inviting, and the service is world-class. The team remembered us daily, noting our preferences and making us feel like the only family in the castle. It’s that rare “unpretentious luxury”—high-end service without the stuffiness.

We also enjoyed the Drawing Room for cocktails and light bites throughout the day. I ordered a bottle of wine and did not finish it, they asked if I would like it sent to dinner. Little touches like that mean luxury to me.

On our way out to the early morning history walk, they had a beautiful coffee station in the Drawing Room with to-go cups and little snacks to take with. The cart was perfectly placed so you would see it as you passed.

Falconry & History

If you go, you must visit the School of Falconry. We spent time with Courtney, and her passion is infectious. We arrived curious about the birds and left completely in love with the wildlife she cares for. Watching these birds of prey in flight is a core memory my family will keep forever. We also took the morning history walk, which I highly recommend. Understanding the layers of this estate makes every hallway you walk through feel more significant.

Things to Know Before You Go

  • Book Falconry Early: It’s the oldest school in Ireland and it fills up fast. Don’t wait until you arrive to schedule it.

  • The Wolfhound Walk: Most mornings at 8:15 AM, you can join the resident Irish Wolfhounds (like Mulligan and Shay) for a stroll. It’s the best way to start the day.

  • The Breakfast Inclusions: Your stay includes a beautiful daily breakfast in the George V Dining Room. Between the incredible food and the outstanding service (shoutout to Eleanor!), it’s an experience you can’t miss.

  • The “Quiet” Season: We visited in late February, and I can’t recommend it enough. The castle was quiet, cozy, and peaceful. Even in the cooler months, there is so much to do: nightly movies with fresh popcorn in the theater, lake cruising, cycling, billiards, or a full spa day.
  • Take a Stroll to Cong: The town of Cong is just a short walk away. It’s charming, historic, and well worth the visit.
  • Afternoon Tea: This is a highlight of the Ashford experience, but it’s popular! Make sure to book this early.
